Thai Noodle Salad

This Thai Noodle Salad is super simple to make and is perfect for a picnic!

Ingredients

2 Franklin Farms Original Veggie Burgers (grilled & crumbled)

1\2 Box of Brown Rice Noodles

1\2 Red Pepper sliced thin

1 Baby Cucumber sliced thin

1 Carrot sliced in ribbons

1 cup of purple cabbage, chopped

1\2 cup Franklin Farms Shelled Edamame

Sesame Seeds

Dressing:

4 Tablespoons of olive oil

2 Tablespoons of Sesame Seed Oil

4 Tablespoons Apple Cider Vinegar

3 Tablespoons of Honey

1 Tablespoon of Soy Sauce

1 clove of garlic, minced

Pepper

Directions

1Cook noodles and veggie burgers according to packaging directions.

2Combine noodles, veggie burgers and veggies in a bowl.

3Using a separate bowl, combine all ingredients needed for the dressing and whisk until combined.

4Combine dressing with the noodles and veggies. Toss to coat and garnish with a sprinkle of sesame seeds.
